DOTW: Gingy

I love ginger, I love cookies… but for some reason gingerbread cookies just aren’t my thing. Regardless, I’d be foolish to not make a gingerbread cookie themed cocktail

Gingy
1.5 oz. gingerbread-infused dark rum
1.0 oz. Irish Cream (Bailey’s)
0.5 oz. Coffee Liqueur (Kahlua)
1 small scoop vanilla ice cream (optional)

Directions:
– combine ingredients in shaker with ice (or in a blender if using the vanilla ice cream)
– shake vigorously (blend!)
– double strain into a chilled cocktail glass
– garnish: graham cracker rim, whipped cream, one foot of a gingerbread man
