For this week’s drink I wanted to maintain a summer feel despite the prickly pear being a bit more fall of a flavor than I anticipated. A quick Google kept producing Prickly Peartinis (vodka + Chambord or just chilled vodka itself) but that just wasn’t the lane I wanted to occupy with this drink.
So to accomplish my goal I decided upon a simple variation of a well-known cocktail, The Cosmopolitan. The Prickly Pear vodka was a little soft and I wanted to add flavor without over powering so I simply dropped the tart stringency of the cranberry for a dash of unsweetened pineapple juice; both summery and light. The result was a pretty interesting drink. The prickly pear was evident but everything was simply a part in the cog, none bigger than the other. Pretty good.
1 ½ oz. prickly pear infused vodka
1 oz. triple sec
½ oz. simple syrup
¼ oz. unsweetened pineapple juice
– combine ingredients in cocktail shaker filled with ice
– shake vigorously
– double strain into chilled cocktail glass
