4 Infused Rum Cocktails to Celebrate National Rum Day!

 

I woke up this morning to get ready for work only to discover I was 6 hours behind on celebrating National Rum Day. Not sure how I missed this holiday, as rum was such a major part of my post college/pre-getting-my-life-together life. It of course helped that my housemate at this time was of Caribbean Island ancestry, thus I got to learn a lot about the difference in not only light vs. dark rums, but the nuances of rums from different islands. That’s a lecture for another time though. What my housemate at that time really provided me with, was a base of knowledge about rum to help better my infusions. So in celebration of National Rum Day here are 4 Infused Rum cocktails to enjoy.

MAUNA LOA

3/4 oz. Clementine Fire Infused Rum*
3/4 oz. vodka
1/2 oz. Blue Curaçao
3 oz. pineapple juice
1 oz. sour mix

– combine ingredients in shaker filled with ice
– shake vigorously
– double strain into Collins glass over fresh ice
garnish: pineapple slice & cherry

*Clementine Fire Infused Rum
750mL light rum
3 – 5 clementines
1 jalapeño pepper

STRAWBERRY DAISY

2 oz. Strawberry-Lemon Infused Rum*
1 oz. club soda (or ginger ale/beer if you want a bite)

– pour rum into chilled cocktail glass
– top with club soda (ginger ale/beer)
garnish: Strawberry and/or lemon-grass stalk

*Strawberry-Lemon Infused Rum
750mL light rum
½ a pint of strawberries
2 lemons
3 tbsp. sugar

PICKET FENCE

2 oz. Ginger Infused Rum
6 oz. hard cider

– pour rum into a pint glass over ice
– top with ice-cold hard cider

*Ginger Infused Rum
750 mL dark rum
1 cup thinly sliced ginger

THE SUN SHOWER (link)

2 oz. Pineapple Infused Rum*
¼ oz. fresh lime juice
Ginger beer, to top
Orange wedge, garnish

– add rum to a Collins glass full of ice
– pour in your lime juice
– top with ginger beer
– stir (or roll) your drink
garnish: orange wheel

*Pineapple Infused Rum
750 mL light or dark rum
½ of a fresh pineapple
